Avocado Corn Salad

Ingredients
  • 2 ears sweet corn
  • 1 cup heirloom tomatoes, diced
  • 1 lime, juice
  • ¾ cup fresh cilantro, finely chopped
  • 1 cup bell peppers
  • ¼ avocado, cubed
  • ¼ red onion, diced
  • 1 teaspoon minced garlic
Instructions
  1. Mix all ingredients together in a bowl and enjoy! Eating raw is that healthy and simple :) If you enjoy a little heat in your salsa, add some jalapeno peppers to spice it up!
